Cast Studies, labs, practice

Can anyone link me any case studies for some practice with anything IT, i.e. setting up servers, DNS, DHCP, Exchange, CA, Terminal Services, Encryption, Security, Linux, UNIX anything really. Just to have some fun and keep my head in the game while I just finished school and am looking for work.

Just going to be making as many VMs as I need to finish what is provided.
