copying ,migrating, users

I need to move ,copy, migrate windows server 2003 terminal users with their office 2003 outlook, and documents and any settings to a new windows server 2008 enterprise server..
I need to do this this july 4th weekend :(((
both are dell 2950 servers but the c:\on the current server is down to 60mb….HELP…thanks
