creating shares with CIFS

Migrating user data from an old W2k server to a newly installed NAS (Linux header, EMC backend) that is using CIFS.
I can recreate permissions, etc but I cannot find out how to recreate the shares on the NAS.

Anyone have a simple “How To” or know of one somewhere as I have not been able to locate any real information to resolve this.
