Desktop Experience features in Windows Server 2008

When building servers for our customers, I’d like to include Disk Cleanup and Mobile Device Center, but these are only available when adding the “Desktop Experience” feature. This feature will also add things like Media Player, themes, Sound Recorder, Calendar, Mail, etc. which I do NOT want on a customer server for performance and breakability reasons.

Anyone know of a way to install specific features on Server 2008 in a more granular way?
