DHCP Address Based on Subnet

Need to know the procedures to setup a DHCP server to hand out I.P. Addresses based on the Subnet of the requesting client. I will have routers in various location providing DHCP Relay functions to my DHCP server in a central location. I have not set this up before and any assistance is worth the points.
