DNS/DHCP newbie

I’m a programmer, but have been asked to help setup a network at a local school.
Someone has ‘helped’ the school previously, and we now have a gateway, 2 servers, and 4 wireless routers handing out IP addresses. I’m told that Server2 (Dell PowerEdge 2900 running Sever2003) was purchased to run AD as a DC, but aside from this there are 6 workgroups and no domains.
I’ve worked in environments with 10.x.x.x for servers and routers, 192.168.x.x for printers/scanners, and 192.168.y-z.x for client machines. This seems to work quite well.
I want to set this up correctly from the beginning, and turn it into a low-maintenance site before the school expands to a second campus next year and moves from 100 to 500 client machines.
Can someone direct me to a good artcile on how to set this up from scratch?
