Eudora vs. Exchange 5.5/2000

I am currently hosting approx. 15 email domains via Eudora. Because of the unique components of Exchange, I would like to move all of our clients (domains) to Exchange. I know that adding an additional domain via Internet Connector on Exchange will work, but can I add all 15 and it work properly.(By the way, we host the DNS for these clients).
