Exchange 2003 merger

We are about to buy another company that has their own exchange 2003 servers. We would like to leave their equipment in place for now however we want them to be able to send and recieve email with our domain name being default. (as well as recieve email with their old domain name) We are also an exchange 2003 shop. What would be the easiest way for us to accomplish this task?
