Exchange, best practices

Is there any information on best practices for exchange server 5.5. How large to keep each users mailbox etc..

Also, does anyone have instructions on how to create a Personal folder for Exchange and Outlook. I know how to do this, I just thought someone may have it written nicely for the average user to understand
