Exchange Server 2007 – Bringing Email inhouse.

Our current email is via POP3 and SMTP being hosted. Our company purchased Exchange 2007 and wants to bring our email inhouse. Any tips, links or advise from someone who has done this before? Anything I should consider or watch out for? I’m planning to install on a test environment first, before going live.
