My God-daughter searched out this recipe and we cooked it last week when the family came over for lunch.

Microwave Chocolate Pudding

Prepped in five minutes, cooked in six, eaten in two. Warning! The sauce is difficult to get out of clothing!

Ingredients

Cakey bit

4 oz self-raising flour
4 oz caster (fine) sugar
1 tsp vanilla essence
4 tbsp milk
1 (beaten) egg
2 oz butter/margarine
1 oz cocoa powder
pinch salt

Topping

1 oz cocoa powder
4 oz soft brown sugar
quarter pint hot water

Method

Sift flour, sugar, salt and 1 oz cocoa into a mixing bowl.

Melt butter on high in a microwave for 45 seconds.

Add melted butter to dry ingredients, along with egg, vanilla essence and milk. Beat well or, preferably, get Goddaughter to do it.

Pour mixture into 8″ souffl? dish or medium-sized, high-sided microwave-proof dish. Or bucket if, like us, you make one double-sized.

Mix together brown sugar and remaining 1 oz cocoa and sprinkle over top of mixture. Pour over hot water until covered.

Cook on high power for 5-6 mins or until set on top. Double-sized takes around 8 minutes.

The pudding will separate on cooking, giving a chocolate fudge sauce at the bottom. Serve with cream, custard or ice-cream.

We had it with custard (of course! We’re Brits!) but it would work well with some thick cream and it was so good that I’m doing it again for lunch today. It may kill me but what a way to go!
