How to start to document a finished netw

I have just finished installing a small business network, of one Win2K SBS 50 clients a router and one external machine using VPN and Terminal Server to use the network.

It has been some time since I documented a network (well I only did it once at tafe) and I have no Idea where to start. Does any one know of a good example I can use?
