Looking for SKYPE chat monitoring software

One of our customers runs a Small Business Server 2003 and they have asked if there is a way to monitor Skype chat logs.

The server has 1 WAN, 1 LAN interface and is running WinPCap at the moment. Anyone had any experience of this?
