Microsoft Virtual Issue

I need to install 2 instances of MS s2k3 as a test environment. The only interaction will be between these two OS’s. My question is this: should I install virtual pc2k7, or virtual server 2k5? I have read the information on MS’s pages, but it doesn’t really answer my query…..Anyone have some good dope to go on?
