Further down in the thread I realised that I could collect up the recipes posted here and create a cookbook of them to sell as a fund raiser for the 3 Day. My goal this year, along with the 60 miles, is to raise $10,000US. I have a feeling that I will need all the help I can get. And I have a specific request for curry recipes so if you have one, please post it!

We’ve all been way too serious lately. And busy. I hate it when those things go together. So let’s have some fun.
Do you have a favourite recipe that you only bring out for the holidays? Do you have a favourite drink recipe that you only bring out on days ending in “y”? Do you have anything about food that you would like to share?
I know that many are on diets. When we look at posted recipes, maybe we can put our collective heads together and think of lower calorie substitutions that would work.
I’ll start- Mandarin Ceasar Salad
Fresh Romaine lettuce- enough to feed however many you’re feeding.
Fresh mandarin oranges- peel some, juice some. You’ll want about a 1/4 to 1/2 cup of juice- again, you’re feeding how many???
Toasted almonds. About 1/3 cup will do. The size of the finished salad will help define this…
1/3 to 1/2 cup freshly grated Parmesan. No, the stuff in the green tin will not work here!
Three or four well rinsed anchovies. If you buy tinned, make sure they are WELL rinsed!
About 1/2 cup of extra virgin olive oil. How much orange juice did you keep? You want about half again as much oil.
Three cloves of roasted garlic, well smooshed. Yes that is a word. Quite serviceable too.
Salt and pepper to taste. You may want to have a bit of lemon handy.
Toss your lettuce, almonds, orange sections, and cheese together. In a separate bowl, smoosh your garlic with your anchovy until you have a paste. Add your mandarin orange juice. Mix well together and slowly add your olive oil. If the dressing needs a bit of bite, add a bit of lemon, to your taste along with salt and pepper.
Toss.
Eat.
Cheap on calories and delicious.
