Packet filtering

Does anyone know of a site/book/document that will help me translate the HEX output from a typical packet filter? I’m not looking to convert it into dec/binary, but for a information source that lists what each number represents (ie 0080 is IP, the next 5 pairs are the MAC address, etc.)
