recover mail from Exchange database

Does anyone one know how if I can exstract Mail from an Exchange 2000 database? I have the old Exchange server that I have the Excahnge databases on but it will not mount and I am wondering if there is a way I can extract a coulple of user mailboxes. We recently moved from a dying Exchange 2000 server to a new Exchange 2003 server and there were a couple of users mailboxes that were not moved. So is there a way I can extract them from the database with out have to remount the database? I have this server removed from AD and I donot want to re add it to my domain because of some replication issues from this server. I have the server isolated and I did an authorative restore on it so it thinks it is the domain.
