Replacement of HD on NT Server

I want to replace my older hard drives on my windows NT Server (service pack 6.0a) with newer and larger HD’s. Currently the HD’s in the server are mirrored. Can I do this simply by removing one of the old drives, replacing it with the new (larger) drive, then break the preexisting mirror and re-establishing the mirror on the new drive, then add the other new drive and mirror the two new drives? It this possible at all? Any help would be appreciated. Thanks for your help.
