Server Maint for the new Admin….

I am currently working in the Tech field and building my experience and education so that I can become a great Admin some day. I want to ask the experts a 2 part question about Server Maint.

What is the best day to day practice to ensure that a server keeps running and does not crash?

And

How can we guage how much of a load to place upon a server before its too over worked?
