Servers to Desktops?

I am posting this message in this Category because I know that Server people have a better idea of what is going on than Desktop people, and I need a Super Tech to answer some Questions for me.

Okay, short and sweet, my Goal is design an Outrageous System, cost is not an issue. Performance is the only issue. Now that the Dual Processors are out for Desk Tops, I am a little Confused. I was under the impression that certain everday desk top Software was not able to handle Multiple Processors. Now we have Mulitple Processors. So can I build a Desk Top with 2 Dual Xeon Chips or 2 Dual AMD Opteron chips and have a Quad Processor Desk Top? And would it work with Windows XP or Vista? Or Only with Linux?

I want to Build a Machine capable of Outrageous Server type Preformance, but be able to Play Games and do everything that a Normal Desk Top does.
Now if I Load up a Dual Socket Motherboard with 2 Separate Dual Chips, and about 8GB of DDR2, will it function as a Desk Top, and will I get a Noticable amount of increased performance from doing this?
