Setting Up Branch Offices

I need information on how to set up two branch offices, using Server 2003, no legacy equipment involved. Both should include DMZs and VPNs for mobile equipment. Both sites have less than 100 personnel. I am considering using a Virtual environment, but am unsure of the best set up or equipment to use. Any help at all would be appreciated.
