Should I hide some survival jobs on my resume?

I am a self taught Network Admin. I worked for a non profit that owned a low income apartment complex from May of 1999 until May of 2007. I designed,found funding for and built thier computer center. I did all that just by reading and doing. No formal training. But when I got there the most modern machine they had was an IBM selectric.

Well when I left them the recession hit and I had to take a part time janitorial job just to make ends meet for 18 months. I was out of work for a year then got another janitorial job with for another 19 months which I just quit.

I want to get back into the IT field but I am wondering how I explain being out of it for 5 years.
