SQL 2000 sort order?

I’m looking to consolidate 2 servers both running separate SQL 7 applications into one new server running SQL 2000. All is looking fine until we realise that one of the installs of SQL 7 has a different sort order that the other. Is there any way of having one app run one sort order and another app use a different sort order on one SQL 2000 installation?
