Terminating CAT5e and amphenol cable onto a CAT3 patch panel

Hello everyone, I have 2 daunting issues and I seek for your support.
1. How do I terminate CAT5e cable onto a CAT3 patch panel.
2. What is the order pairing when terminating an amphenol cable that connects to an analog card (24port) of a Panasonic pabx unit.

I have tried a number of forums on the Internet but was unable to find solution to my problem.
