Too varied skill set?

Since I started in IT 5 years ago I have done: Business Analysis, Systems Analysis, Design, Requirements Workshops with external clients, Programming (VB, Access, C++), Architecture, Team Leading, know my way around most Microsoft software and can build a PC.
End result? I know a fair bit all sorts of things and have been successful at them, but I’m not an expert in anything.
I do want to get away from the hands-on technical side and move to man/project management, but my CV obviously doesn’tshow that I can do those things. I may be able to get into it with my current employer, but for various reasons it is looking unlikely that I will be able to stay there.
I’d love to be a sort of “Deputy” Manager, to learn the skills, but most places don’t have that sort of thing anymore.
How can I progress?
