Understanding LAN bandwidth

My company is installing a new network system, and questions have arose in deciding what equipment (switches, routers, firewall, etc.) to buy. Biggest question is how to maximize bandwidth from an application server to about 25 users. Application runs heavy on both server and client. The main app really wants a full 100mb connection to run best.

Network is comprised of 30-40 PCs and Macs, several network printers, 2-4 servers, some file, some application, and a fractional T1 internet connection. Backbone will be composed of Cat5 cabling.

I assert that we need to have gigabit NICs and connections to stackable 10/100/1000 switches to maximize network bandwidth. Current proposal is to use a 10/100 NIC on the server, connected to non-stackable 10/100 switches.
