Upgrading RAID 1 array

I’m looking to upgrade the OS drives in my fileserver, which are in raid 1 array currently. I will be upgrading to 2 new larger drives and would like to if possible copy the image of the first set so i would not have to reinstall everything. What would be the best way to go about doing this, and what programs are best for the task? OS is windows server 2003
