Virtualization assessment for my servers?

I am looking at our 50 or so servers and trying to figure out which ones can be virtualized. We have a MS AD network with a lot of applications and development so I have to proceed with caution. Plus the company is growing.

Any suggestions on the best strategy for this task. Aside from the obvious disk size/capacity and utlization what else should I be looking at?
