Virtualize or Not – SBS 2008 Premium

So I have been throwing around the idea for a while to offer SBS 2008 Premium as a virtualized solution on 1 server versus 2… I was wondering if anyone has used this solution and/or their opinions on it…

For instance, a standard setup may look like this…

Redundant power supply
2 x 500 GB Hot Swappable Hard Drives
RAID 1
8 GB RAM
1 x Xeon Processor
1 x DVD ROM
1 x Internal Back Up Disk Drive (RD1000 / RDX)
2 x 500 GB Back Up Disk Cartridges (For RD1000 / RDX)
Dual Gigabit Network Adapter
Microsoft Small Business Server 2008 Premium
