VoIP over Satellite connection

I am interested in switching my standard business phone lines to VoIP using my satellite internet connection. My VoIP provider is Packet8.

Packe8 explained to me that a satellite connection for VoIP is not preferred.

Can someone explain to me which satellite technology, service and hardware should I request from my internet satellite provider to make sure that I get a clear VoIP connection?

Is there any difference between IP telephony and VoIP?
