VPN and Internet Traffic

Hello,

I am trying to find a way to limit the traffic which is sent over a VPN connection. For example, when I use a laptop to connect to a Windows 2000 server running exchange 2003 (note I cannot use the SSH connection method because Exchange is running on 2000 not 2003) all my internet traffic is sent over the VPN slowing the connection down significantly.

Is there a way to limit the data sent over the VPN just to connecting to the exchange server and allow all other traffic to go through the unsecured internet connection?
