Where can I find instructions for setting up a new AD Domain from scratch?

Hi, I’m looking to set up a new Domain using a Windows 2008R2 server. I’m looking for some source of documentation that will list the concepts to create it. If there is a step-by-step guide, even better.

I plan to convert peoples’ local computer accounts to Domain accounts and enable roaming profiles. There are so many roles that a server can do, which ones do I actually need to enable?
