Windows Server 2003 mirroring drives issue

I was trying to do the following:

Have a Windows 2003 SBS server with 2.5 MB RAM, P4 2.88 GHz, 2 80GB drives that are mirrored and want to replace the 2 mirrored drives with larger drives. Purchased 2 WD IDE 250 GB drives and did:

1.Broke the mirror on the C drive (C and D drives are the same mirrored volume).
2.Shutdown the system
3.Install the new drive (cable select- no jumpers)
4.Initialize the drive in Dynamic mode. Format both logical drives and drives are “Healthy”
5.When I right clicked to Select “New Volume” — only Simple was available Mirror was grayed out.
6.Selected the volume that I wanted to mirror and the ?Add Mirror? drop down selection was grayed out.

Had:

1 80 GB drive Dynamic and Healthy
1 250 GB drive Dynamic and Healthy

Add Mirror function is not available

7.I noticed that the ?old? D drive was listed as ?Missing? and still mirrored. This drive (hardware) was removed previously so I removed the mirror and deleted the volume.
8.I deleted the 2 logical drives on the new drive and the drive was Dynamic and Healthy. I was still unable to right click and select the ?Add Mirror? function.
9.I then removed the new drive (physically) and reinstalled the old drive to at least get the system back to its original state. The old drive 80GB installed fine (foreign) but has the same issue, the ?Add Mirror? function is unavailable.
10.Because of time constraints, I had to leave the system like this.

Does anyone have any ideas why the ?Add Mirror? functionality is not working!!

I am very tight on space and really need to get this done quickly.
