BACKUP A HARDDRIVE TO FLOPPY DISKS

I have an IBM ps/valuepoint Model 6381 pc that is still running DOS (ver 6.22)which has data on a harrdrive that I would like to copy so that it can be loaded into another PS Valuepoint to be used as a backup. My question is would xcopy continue copying to multiple diskettes after one diskette is full?
The machine I am copying from contains the only working copy of the configurations for which this machine is used. This machine is used to support printing to an IBM 3835 printer.
We used tohave 2 pc’s for this purpose, but one of them had a harddrive go bad for which no backup was on hand. This pc was set up around eight years ago by someone who has since retired, and rather than try to go through the process of trying to figure out how all of the programs are set up, I figured it would be best to copy off the files from the working machine and reload to the machine PS Valuepoint that will be used as the spare.
I thought of using Norton GHOST, but I do not see anything in the product literature about using for DOS machines.
Any suggestions would be appreciated.
