Digital Voice Recorders

Our management team is considering the use of digital voice recorders as a method of reducing the time it takes to write project update notes. Our thought is to dictate notes into the recorder and use speech-to-text software to output an electronic file. Does anyone have input on how well digital voice recorders handle this type of task, and what software works well?
