Running MS/PC Dos on Stand Alone Syste

Why do we all have to fall back on the GUI interface, Shurly we can run a Pentium on DOS 6.5 , without having to resort to Windows or some other O/S.
I had been running 5 versions of DOS starting with 2.3 on an old Amstrad PC.
With each version ina diferent Directory, using the dosshell as an interface, However after about three months the system crashed, due I think to errors in the cofig.sys file and
autoexec.bat, I have been unable to get the system back up, I will try again though I think I will need specialist help with the configuration of the system, any suggestions welcome, has anyone achieved this and had it work.
