In the instance of changing the licensed user in MS Office, proceed as if you were going to reinstall the entire package.

This time, just add or remove a component. I believe that somEwhere in the initial stages of the Setup Wizard, it will prompt you to enter the user and company information.

I'm sure you could change it through the registry but, you can also change it through either Word or Excel. Go to the tools menu, select options. In Word go to user information tab and change the name there. In Excel go the general tab and change the name there. Changing one will change them all.
