Archiving a Decommissioned System

We’ll be retiring a legacy system soon and we will have to keep the data for legal purposes. We think it will be best to use a utility to save the data as ASCII files, while keeping the logs to prove that the data wasn’t modified. BUT, has anyone seen any material out there concerning best practices in this context? Thanks.
