Auto reply for ex employees

Hi,

We are using Exchange 2000 with Outlook XP, how do we setup for auto reply saying “The employee is no longer with the company, please forward all email to…”? We have disabled all the accounts so out of office assistance is not an option, plus we want to send a message to the sender everytime they send a message to the former employees. Is this possible in Exchange 2000? Thank you!
