Blocking Spam in Outlook

Is there a way to setup outlook so that it will only send emails from address's in my Contacts to my inbox and send the rest to 'junk mail' or some other folder?

Yes, there is...

but the way you go about it is determined by which version of Outlook you are using.

Outlook 2007:
Tools\Options\Junk Email\Options Tab: Click the 'Safe Lists Only' radio button. On the same tab, you are given the option to delete Junk Mail, or sent it to the Junk Mail folder. Place a checkmark in that box to delete junk mail upon receipt. Leave that box empty to route Junk Mail to a Junk Mail folder for future review.

On the Safe Senders tab, place a checkmark in 'Also trust email from my Contacts'.
