centralized email monitoring software

Hey guys I need some help trying to figure out this problem: My client has his own domain and website but he’s not hosting it from his business, he’s paying another company to host it for him. The other day he asked me to setup the mail so he’s able to see all his employees mail without them knowing. Well I did some research and I found out that maybe by asking the company that’s hosting his website to forward all email to a separate email account would do the trick but I need to ask them ifthey support that. Well I don’t want to rely on that and that’s the reason I’m asking if there’s a way I can do anything to get around that or maybe you guys know of a software that would let me setup a mailbox that will make a copy of all incomingand outgoing email for later reading.
We are not using exchange and I read about setting up a smtp server to forward all mail but that could be a security issue later on. Anyway any help is appreciated, thank you.
