Do you know if there is a way to change the default SMTP address on an exchange box without having to reinstall exchange? Where would you change that?

In Exchange Admin utility, expand the site, highlight Configuration, in the right window double click Site Addressing. Click the Site Addressing tab, and then edit the SMTP address you see there. You will get a prompt asking if you would like to convert all existing addresses to the new SMTP address.
