coming up with network diagrams for an existing network

Hie guys

I have just joined a data services provision company where they connect customers through fibre. Since they started 5 years ago, there has not been any diagrams to show the installations. Customers are spread around the city and we have several POPs around the city mainly in the electricity utility substations in various suburbs. We have decided to put sanity nto the system. I have been tasked to come up with network diagrams including floor plans where some equipment is housed. Some buildings do not belong to us though. However my main question is where do I start and whats the best way and software package to use for this task. I have a bockground of designing electrical systems drawings with AutoCAD. Should I use this for the network diagrams, please help with all ideas possible. An case studies or samples of designs are very welcome.
