Converting CMYK to Spot Color In Adobe

How do you convert CMYK to Spot Color in adobe photoshop. This is needed as the printer of our newspaper told me that it needed to be done, but he didn’t know himself, how to change it. Help ASAP would be great, as the paper needs to be submitted in a week or so. Thanks in advance, Jason
