Do you have a good backup ? If you do, setup a dedicated Exch. 5.5 server with the same site and organization name. Do not join the site. make sure it has the same NT and Exchange service packs as the ones on the production servers. Restore the Information Store from tape. On the restore server, open the Exchange admin and highlight the server.
Open the properties of the server and click on Advanced tab. Click on Consistency Adjuster. Check the first box which says "Synchronize with the directory, and create new directory entries for mailboxes....". Under Filter, check "All Inconsistencies". Go to Recipients container and open properties of the mailbox and associate it with an NT account, such as the Exch. service account. make sure you have installed Outlook client on this server. Recreate the user's mailbox on the production server and create personal folders in his Outlook client that points to this PST file.

I don't know what backup product you are using, but if you are using Seagate(Veritas) Backup Exec, it will allow you to restore indivdual mailboxes from tape.
Recreate the mailbox in the Exchange Admin under the same NT account as it was before theaccident. Then simply run a restore job in Backup Exec where the only item set to restore is the deleted mailbox.
Good luck!
