Disable "Auto Date"

How can I stop Word and Excel from automatically updating the date to the current date whenever people open existing documents?

A date derived from a formula (eg =today()-20)will change whenever the sheet is opened. To get these to stop calculating and use the displayed value from now on select the offending cells and copy them, then select paste special and select the paste formulas as values option.

Right click on the date and select Toggle field codes.
Change the function TIME to DATE.
