Do I need SAN-FC for small scale projects

Over the past 6 months I have been implementing a server consolidation strategy. The first stage was the implementation of a SAN-FC (24TB), then consolidating all windows servers to blades, consolidating UNIX to a single platform and now virtualization.
The cost of the FC SAN tends to look expensive for the smaller projects. example; to add a server to a SAN-FC you have to take into account GBIC, HBA and Disk costs (We work on a cost per project basis) this can add up. You can hide these costs in a large project were server costs are in excess of 250K.
What I am reviewing is: Do I use iSCSI or NAS for these smallers scale projects, reducing my costs and utilising existing skill sets. Is it easy to implement, Any feedback appreciated...
