Does Proxy allow you to surf anonymously?

I have read that proxies do allow you to surf anonymously, but in one blog I read proxies keep your data with you and eventually sells later or use it for their own marketing stuff https://www.purevpn.com/blog/anonymous-surfing/ after that, i search for it and I found this https://www.practicalecommerce.com/Does-A-Proxy-Server-Keep-Me-Anonymous-On-The-Internet

My question is if I really want to be anonymous online (I'm a cyberstalking victim actually) so does proxy is the right choice?

There is not any state of anonymity on the internet as your information will be stored on the web somewhere. What proxy servers do is they hide your IP address and show some other IP address and informations to the websites you visit. So, your personal info will not be tracked by the websites you visit but the proxy server will contain all your info.

Although proxy allows you to surf anonimously but somewhere in between proxy server and the sites you visit, your data is monitored. There is not any state of anonymity. Proxy server stores your data.
