Kinda depends upon what you've decided on DNS structure but a quick and dirty answer is configuring Active Directory Domains and Trusts. You configure the trusts for 2 of the office locations as trusted domains with one office being the root domain in the forest.

note: Windows & .NET magazine has a really good forum section [including Q&A] for Exchange. It's a good place to go to get answers on Exchange related question.

Note: Exchange has it's own AD connector that is required to be installed before you actually install Exchange on the server. This is for replication with AD. Setting up Exchange to work with remote sites has it's own requirements apart from the server domains & trusts. searching the Exchange FQA on Technet is a good place to get information on setting up Exchange to replicate with remote locations.
