Exchange 2000 Srvr and Transaction Logs

I need to view emails that have been sent out through our exchange server, unfortunately it has been deleted locally through Outlook. How do I approach this? I have logging enabled and have all the transaction logs from the MDBDATA folder available, I’ve setup a recovery exchange server to restore emails, however I do not know where I should start on viewing the emails. Any suggestions is greatly appreciative.
